 Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced

  • 2 teaspoons curry powder

  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper
  • 2 cups green lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 can of coconut milk
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup frozen peas
  • Salt and pepper, to taste

Instructions:

  1. Heat the oil in a large pot over medium heat. Cook on until onion & garlic are softened, about 5 minutes.
  2. Add the cumin, curry powder, ginger, turmeric, coriander, cinnamon, and black pepper and cook for 1 minute.
  3. Stir in the lentils, broth, coconut milk, carrots, potatoes, and peas. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
  4. Salt and pepper to your liking and pepper.
  5. Serve the soup hot, garnished with cilantro or other herbs if desired.
