Chili con Carne:
- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 jalapeno pepper, minced (optional)
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5 ounces) can of diced tomatoes
- 1 (15-ounce) can of kidney beans, rinsed and drained
- 1 cup beef broth
- 1/4 cup chopped fresh cilantro (optional)
Instruction:
Heat the oil over medium-high heat in a large pot or Dutch oven. Add the ground beef and cook until browned, stirring occasionally. Drain off any excess fat.
Add the onion, bell pepper, jalapeno pepper, and garlic to the pot and cook until the vegetables are tender about 5 minutes. Stir in the cumin, chili powder, salt, and black pepper.
Add the tomatoes, kidney beans, and beef broth to the pot. Bring to a boil, reduce the heat to low and simmer for 20 minutes. Stir in the cilantro, if using.
Serve the chili con carne hot, with your favorite toppings.
