This Rustic Leek and Potato Soup is a comforting and hearty dish that is perfect for cold winter nights.  Ingredients:

  • 4 medium leeks, white and light green parts only, thinly sliced
  • 2 cloves of garlic, minced
  • 4 medium potatoes, peeled and diced
  • 4 cups of chicken or vegetable broth
  • 1/2 cup of heavy cream (optional)
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions:

  1. In a large pot or Dutch oven, melt the butter over medium heat.
  2. Add the leeks and garlic and sauté for a few minutes until the leeks are softened.
  3. Add the potatoes and broth to the pot, and bring the mixture to a boil.
  4. Reduce the heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
  5. Remove the pot from the heat and use an immersion blender to blend the soup until it is smooth. If you don't have an immersion blender, you can also transfer the soup to a blender and blend in batches.
  6. Return the soup to the pot and stir in the heavy cream, if desired.
  7. Season the soup with salt and pepper to taste.
  8. Ladle the soup into bowls and garnish with fresh thyme or parsley, if desired.
  9. Serve the soup warm and enjoy!

Note: If you prefer a thicker soup, you can add more potatoes or less broth. If you prefer a thinner soup, you can add more broth or fewer potatoes.
